Lemonade Mojito

Report
The Lemonade Mojito blends fresh mint leaves with lemon juice, stevia, white rum, and lemonade to create a refreshing cocktail with a balance of citrus and sweetness. Muddling the mint with lemon juice releases bright, herbal flavors complemented by the carbonation from lemonade or optional club soda. Served over ice, this drink offers a crisp and invigorating texture suitable for warm weather or casual gatherings.

Description

The Lemonade Mojito combines about 10 fresh mint leaves muddled with lemon or lime juice and sweetened with stevia to infuse the citrus with herbal notes. White rum adds a spirituous depth, while the Simply Light Lemonade contributes sweetness and a tangy backdrop. The optional addition of club soda can introduce mild fizz to lighten the drink. Ice chills the mixture, making it an easy-to-prepare cocktail that balances herbaceous mint with citrus tartness and sweet rum flavors.

Preparing this cocktail involves gently crushing the mint with lemon juice to release essential oils, then blending with sweetener and rum. Topping with lemonade and stirring preserves the carbonation and bright flavors. This drink works well as a refreshing, slightly sweet beverage for informal occasions or as a light alternative to heavier cocktails.

For variation, adding fresh seasonal fruit such as raspberries or blueberries can introduce extra layers of flavor and color. These ingredients complement the mint and citrus without overpowering the core mojito profile. Adjusting the sweetness with stevia or sugar syrups allows customization to personal taste.

Ingredients

Servings
  • 10 mint leaves
  • 1 oz lemon juice or lime juice
  • ½ packet stevia or 2 squirts liquid stevia
  • 2 oz white rum
  • 6 oz lemonade Simply Light
  • 6 oz club soda lemon
  • ½ cup ice

Instructions

  1. Wash mint leaves and pat dry. Wash lime or lemon and slice in half.
  2. Add about 10 mint leaves into your glass. Then, add juice of 1 lemon or lime (approximately 2 oz).
  3. Use a muddler to crush the mint leaves with the lemon/lime juice. This will release the flavors into the lime or lemon juice. Once mint is muddled, add stevia. (Or cane sugar, simple syrup, mint syrup.) Stir until dissolved.
  4. Add about ½ cup of ice to your glass glass and pour in 2 oz of white rum (or your choice of liquor.)
  5. Top the glass with 8 oz (1 cup) of Simply Light Lemonade. Stir and enjoy!

Notes

  • To make the drink bubbly, replace half the lemonade with club soda for a fizzy twist.
  • Add fresh fruit like raspberries or pomegranate seeds to introduce subtle complementary flavors.
