Lemony White Bean Salad
Description
The Lemony White Bean Salad features tender cannellini beans dressed in a zesty vinaigrette of olive oil, fresh lemon juice, red wine vinegar, Dijon mustard, and minced garlic. The acidity from the lemon and vinegar balances the richness of the beans while the mustard adds mild pungency to the dressing.
Thinly sliced red onion introduces a subtle sharpness and crunch, and fresh parsley contributes a bright, grassy flavor. The salad is prepared simply by whisking the vinaigrette and tossing it with the beans, onions, and parsley, allowing the flavors to meld together. The seasoning can be adjusted by taste to balance salt and pepper.
This dish serves as a refreshing side or light meal component, pairing well with grilled meats or vegetables. It can be prepared ahead to allow the flavors to develop further.
