Leprechaun Bait
Description
This recipe for Leprechaun Bait delivers a fun snack made by mixing crunchy Chex cereal, Lucky Charms, small pretzels, colorful mini M&Ms, and marshmallows with a coating of smooth white chocolate melted together with coconut oil. The white chocolate solidifies after spreading the mixture onto parchment paper, binding the ingredients into clusters while preserving the crunch and chewiness of the components.
The combination offers a mix of sweet, salty, and chocolaty elements in each bite. The marshmallows add softness and chew, contrasting the crispness of cereals and pretzels. The recipe uses a microwave method to melt the chocolate cautiously in short intervals to prevent burning.
Once the chocolate sets, the snack mix can be broken into pieces for easy serving. It's suitable for snack time, parties, or holiday-themed treats. Cooling can be expedited by refrigerating briefly after spreading.
Properly cooled and stored in an airtight container or bag, the mixture keeps for several days. Freezing extends shelf life for up to three months but should be completely cooled before storage to prevent moisture buildup and sogginess.
Ingredients
- 2 cups Chex cereal
- 2 cups Lucky Charms cereal
- ½ cup Lucky Charms marshmallows
- 2 cups mini pretzels Synder’s Itty Bitty brand
- ⅓ cup M&M's mini
- 1 bag white chocolate melting chips 10 oz, Ghirardelli brand
- 1 tbsp coconut oil
Instructions
- Line a large cookie sheet with parchment paper. Combine all the dry ingredients in a large bowl. Set aside a few Lucky Charms marshmallows for topping.
- Melt white chocolate chips with coconut oil in a microwave safe bowl, increments of 30 seconds to avoid chocolate melting. Stir until completely smooth.
- Pour white chocolate on top of dry ingredients in the large mixing bowl and stir with a rubber spatula until everything is coated. Work quickly, the white chocolate will harden in a short period of time.
- Spread the mixture onto the parchment lined baking sheet, sprinkle remaining marshmallows on top, and let it harden. You can toss the sheet pan in the refrigerator for 10 minutes to expedite the process. Enjoy!
Notes
- Use parchment or wax paper to prevent the white chocolate mixture from sticking to the pan.
- Store the mix in an airtight container or ziplock bag for up to 5 days.
- For longer storage, freeze the cooled mixture for up to 3 months.
- Ensure the mixture has fully cooled before storing to avoid sogginess caused by trapped steam.
