This Light Crespelle Recipe uses white whole wheat flour combined with milk, whole and egg whites, olive oil, and kosher salt to create a smooth batter. The ingredients are blended together for an even texture ensuring thin crepes once cooked.

Crespelles are cooked in an 8-inch non-stick skillet preheated over medium-low heat. The pan is lightly sprayed with olive oil before pouring a measured three-tablespoon portion of batter and swirling it evenly to form a thin layer. The crespelle cooks for about 30 seconds on one side before briefly flipping for 10 seconds on the other to finish. The result is a light, pliable crepe with a gentle flavor and slight golden hue.

  • 1 cup white whole wheat flour
  • 1 1/2 cups milk 1% fat
  • 2 large egg or replace with 1 whole egg, white
  • 1 large egg whole
  • 1 tsp olive oil
  • 1/2 tsp kosher salt
  • olive oil spray form

Instructions

  1. Put all the ingredients in the blender.
  2. To make crespelles, heat an 8-inch non-stick skillet with a 6-inch bottom on medium-low heat. Let it get hot.
  3. Lightly spray pan using olive oil spray and pour 3 tablespoons of batter into the pan, slowly swirling the batter around the pan to cover evenly. Cook about 30 seconds. (easiest way to do this is fill a 1/4-cup measuring cup 3/4 full.
  4. Flip and cook another 10 seconds.
  5. Remove and set aside on a plate and repeat the process with the remaining batter.
