Ingredients
For the Sweet Potato Donuts
- 1 cup sweet potato cooked
- 1 cup brown rice flour
- 1 cup sweet potato starch
- 1 cup brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 cup mayonnaise
- 1/2 cup coconut oil
- 5 eggs
Toppings:
- Curly's BBQ
- 1/2 cup sour cream
- 1 talk green onion chopped
Instructions
For the donuts:
- Preheat oven to 350°F. Add sugar, oil, mayonnaise, and eggs to mixer and beat until well combined.
- Add rice flour and sweet potato starch and continue mixing until those ingredients are fully incorporated.
- Add cooked sweet potato and continue mixing until incorporated into the batter.
- Add baking soda and baking powder and mix until all ingredients are well combined.
- Pour into silicon donut molds and bake for 20 minutes at 350°F.
- Transfer donuts to a wire cooling rack.
Toppings:
- Heat Curly's BBQ in a medium skillet for about 5-7 minutes, stirring occasionally to thicken sauce.
- Using tongs, generously cover each of the sweet potato donuts with your barbecue.
- Scoop sour cream into a plastic squeeze bottle and apply to donuts in a zig-zag pattern on top of the barbecue.
- Finish each barbecue donut with a sprinkle of chopped green onion.
