Portobello Mushroom Meat

  • 1 tbsp olive oil
  • 1 onion chopped, small
  • 1 clove garlic minced
  • 1 tsp cumin ground
  • 1 tsp smoked paprika
  • 3 portobello mushrooms chopped
  • 1 tbsp chipotle pepper minced, canned
  • salt
  • black pepper

Loaded Veggie Nachos

  • tortilla chips
  • portobello mushrooms used as meat substitute
  • black beans or pinto beans
  • shredded cheese or crumbled queso fresco
  • salsa
  • vegetables like zucchini, green or red peppers, corn, etc, sautéed
  • sour cream
  • cilantro
  • jalapeno pepper
  • green onions
  • tomato chopped
  • anything else you like on your nachos!

Instructions

Portobello Mushroom Meat

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add onion and cook until softened, about 3 minutes.
  3. Add garlic, cumin, and paprika; cook 1 minute.
  4. Add mushrooms and chipotle and cook until liquid from mushrooms evaporates, about 8 minutes more.
  5. Remove from heat. Stir in salt and pepper.

Loaded Veggie Nachos

  1. Top tortilla chips with mushroom meat and other toppings.
