Low Carb Broccoli Salad

Low Carb Broccoli Salad combines fresh broccoli and cauliflower florets with crunchy bacon, cubed Colby jack cheese, and diced red onion. The creamy dressing made from yogurt, mayonnaise, honey, and red wine vinegar adds tang and a touch of sweetness, binding the salad ingredients together. This salad offers a crisp texture and a balance of savory, creamy, and slightly sweet flavors, suited for a low-carb meal accompaniment or side dish.

Description

The Low Carb Broccoli Salad features chopped broccoli and cauliflower florets combined with crispy bacon pieces, diced red onion, and cubes of Colby jack cheese. The creamy dressing is prepared ahead by whisking together plain Greek yogurt, mayonnaise, clover honey, red wine vinegar, and seasoning, which lends a smooth and slightly tangy character to the salad.

The fresh vegetables maintain crunchiness, contrasting with the richness of the bacon and cheese. The honey provides mild sweetness balancing the savory elements. Tossing the salad just before serving ensures the textures stay vibrant and the dressing coats evenly.

This salad works well as a cold side dish for gatherings or light lunches. It can also be made slightly in advance but is best served fresh to keep the broccoli and cauliflower crisp.
