  • 3 cups almond flour 300 grams
  • 4 tablespoons coconut flour 32 grams
  • 1 tablespoon baking powder
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2/3 cup Monkfruit sweetener
  • 7 tablespoons coconut oil melted
  • 6 tablespoons almond milk unsweetened
  • 4 egg at room temperature, large
  • 4 1/2 teaspoons banana extract

Instructions

  1. Preheat your oven to 350℉ and line the bottom of an 8 inch loaf pan with parchment paper, rubbing the sides with coconut oil.
  2. In a medium bowl, whisk together the almond flour, coconut flour, baking powder, cinnamon and salt.
  3. In a separate large bowl, whisk together all the remaining ingredients until well combined.
  4. Stir the flour mixture into the wet ingredients until well mixed. Let stand for 10 minutes for the coconut flour to start absorbing the moisture.
  5. Pour into the prepared pan and bake until a toothpick inserted in the center comes out clean, about 50 minutes to an hour.
  6. Let cool in the pan for 1 hour. Then, gently remove to a cutting board, slice and devour!
