Low Carb Waffles
Description
This recipe uses separated eggs to introduce airiness by whipping the whites to stiff peaks, then folding them into a coconut flour and sweetener mixture combined with almond milk, melted butter, and vanilla extract. The addition of baking powder helps the waffles rise slightly, while cinnamon adds a gentle spice when included. Cooking in a preheated, greased waffle maker yields waffles with crisp exteriors and tender centers.
The waffles can be served with sugar-free syrup, powdered sweetener, or sour cream and berries for additional flavor and texture contrast. The recipe makes about five waffles, which can be stored in the fridge for several days or frozen between parchment layers to prevent sticking and preserve freshness.
Variations in waffle shape and texture depend on the waffle maker: heart-shaped makers produce thin, crispy waffles, while Belgian-style ones yield thicker, softer waffles. The recipe details how to maintain fluffiness by folding in the egg whites gently. This makes for an adaptable low-carb breakfast or snack option.
Ingredients
- 5 egg separated, room temperature
- 4 tablespoon coconut flour
- 1 tablespoon granulated sweetener or more, to taste
- 1 teaspoon baking powder
- 1-2 teaspoon vanilla extract
- 2 tablespoon almond milk
- ½ cup butter unsalted and melted, 112g
- 1 teaspoon cinnamon (optional)
Instructions
- Separate the eggs. Whisk the egg whites until they are firm and form stiff peaks.
- In a second bowl, mix the egg yolks, coconut flour, sweetener and baking powder with an electric mixer until smooth.
- Add the melted butter, almond milk and vanilla and mix until well-combined.
- Gently fold spoons of the whisked egg whites into the yolk mixture. Try to keep as much of the air and fluffiness as possible.
- Preheat the waffle maker and grease it well with butter. Place enough of the waffle mixture into the warm waffle maker to make one waffle. Cook until golden.
- Repeat until all the mixture has been used. Re-grease the waffle maker between waffles.
Notes
- Store leftover waffles in the fridge up to 5 days or freeze them between parchment sheets for up to 3 months.
- Serve waffles with sugar-free syrup, powdered sweetener, or sour cream and berries for variety.
- Heart-shaped waffle makers create thin, crispy waffles; Belgian makers produce thicker, soft waffles.
