Mamba (Spicy Haitian Peanut Butter)

Mamba is the Haitian spicy version of peanut butter that is distinguished by the presence of chili pepper, usually Scotch Bonnet.

Ingredients
- 1 lb shelled raw peanuts
- 1 scotch bonnet pepper , seeded and chopped
- 1 tablespoon cane sugar
- 1 tablespoon peanut oil
- 1 teaspoon salt

Instructions
- Preheat the oven to 350 F (175°C) for 15 minutes.
- Add the peanuts onto a baking sheet lined with parchment paper or a silicone baking mat.
- Roast the peanuts for 20 to 25 minutes, stirring them regularly with a wooden spoon, checking frequently towards the end to make sure they do not burn.
- Add the peanuts into a colander with large holes and, using both gloved hands, stir the still hot peanuts, rubbing them constantly to remove their skin.
- The skins should gradually fall out through the holes.
- In a food processor, mix the peanuts, salt and sugar for 5 minutes.
- Add the chili and blend again for 5 minutes.
- Add the oil and mix again for 3 minutes or until obtaining a smooth paste.
- Transfer the paste to a sterilized glass jar and tightly close the jar.
- Mamba can be stored in the refrigerator for 1 month.
