  • 2 large Mango diced
  • 2 Roma tomato seeded and diced
  • 1 red onion thinly sliced
  • 1 jalapeño diced thinly
  • ½ cup cilantro roughly chopped, fresh
  • lime juice juice of 2 limes
  • ½ teaspoon salt

Instructions

  1. Cut each mango in half lengthwise. Remove the pit and make slices lengthwise and horizontal across the half without cutting through the peel. Turn the flesh inside out and scoop the cubes off carefully with a spoon or a paring knife.
  2. In a large bowl, combine the diced mango, diced tomato, sliced red onion, diced jalapeño and chopped cilantro.
  3. Add in the lime juice and salt and stir to combine.

Notes

  • Add additional salt to taste after combining ingredients if a saltier flavor is desired.
  • For a spicier salsa, include the jalapeño seeds and white membrane when dicing the pepper.
  • This salsa works well as a topping for grilled chicken or fish, adding fresh flavor and texture.
