Maple Pecan Baked Oatmeal

Maple Pecan Baked Oatmeal is a hearty breakfast dish combining rolled oats, almond milk, ripe bananas, and chopped pecans baked until golden. The addition of cinnamon, baking powder, and maple syrup results in a moist, tender texture infused with warm spice and natural sweetness.

Description

This baked oatmeal combines rolled oats with pecans, cinnamon, baking powder, and salt, mixed with almond milk, maple syrup, egg, melted coconut oil, vanilla extract, and sliced ripe bananas. The batter is poured into a greased baking dish and baked at 375°F until the top is lightly browned.

The baked result has a soft, moist crumb with a gentle chew from the oats and crunch from the pecans, accented by the aromatic cinnamon and vanilla. The bananas add moisture and natural sweetness, complemented by the maple syrup both in the bake and as a drizzle when serving.

This dish can be portioned for breakfast or a snack and pairs well with dairy or plant-based milk. Leftovers store well in the refrigerator for up to 4-6 days and can be reheated in the oven or microwave to restore warmth and softness.
