Margarita Chicken Recipe
Description
The Margarita Chicken Recipe uses a marinade of lime juice, tequila, agave syrup, olive oil, salt, pepper, and optionally jalapeño slices to infuse bone-in chicken thighs. The chicken is marinated from 30 minutes up to 4 hours to absorb the flavors.
The marinade offers a balance of tartness from lime, sweetness from agave, and subtle heat from jalapeño if included. Grilling the chicken at medium heat with skin side up first helps render fat and crisp skin. Cooking to an internal temperature of 165°F ensures juiciness and food safety.
This chicken can be served with the grilled lime slices for squeezing, enhancing the citrus notes. It pairs well with simple sides such as rice, salad, or grilled vegetables for a flavorful meal.
The recipe notes that nutritional information is calculated based on 10% of the marinade remaining, as the rest is discarded after marinating.
