Marzipan Truffles

Marzipan Truffles are small marzipan balls coated in melted dark or milk chocolate, then decorated with drizzled white chocolate stripes. The process involves melting chocolate twice: first to coat the marzipan and then to create decorative stripes, resulting in bite-sized confections with a smooth, glossy chocolate exterior and a sweet almond-flavored center.

Description

This recipe starts with shaping marzipan into balls placed on wax paper. Dark or milk chocolate is melted carefully in short bursts and optionally combined with butter or coconut oil to enhance glossiness and coating texture. Each marzipan ball is dipped and coated, allowing excess chocolate to drip off before chilling to harden the shell in the refrigerator. Once set, white chocolate is melted similarly and drizzled over the dark chocolate coats in decorative stripes, adding visual contrast and a complementary sweet note. Cooling again firms the white chocolate details.

The resulting truffles combine the chewy, nutty sweetness of marzipan with a firm chocolate coating that adds richness and texture. About 20 truffles are yielded depending on size, making them suitable for gifting or special desserts. The recipe notes variations such as swapping the base chocolate and drizzle for different flavor contrasts.

  • 8 ounces marzipan (click link for EASY homemade marzipan recipe!)
  • 6 ounces dark chocolate chopped (use more if needed, or milk chocolate, according to preference
  • 3 ounces white chocolate , chopped (use more if needed)
  • Note: You can also use white chocolate as the base and use dark chocolate for the stripes
  • butter optional, for a glossier chocolate coating, or coconut oil, 1 tablespoon

Instructions

  1. Line a baking sheet (small enough to fit in the fridge) with wax paper.Chop the dark/milk chocolate into small pieces and place them in a microwave-safe bowl. Microwave the chocolate in 20-30 seconds at a time, stirring each time, until the chocolate is melted and smooth.  If you like a slightly glossier chocolate coating, stir in the butter or coconut oil at this point.
  2. Dip the marzipan balls into the melted chocolate, letting the excess drip off (you can use a dipping tool or tines of a fork) and then place them on the wax paper. Once all the marzipan balls are coated you can transfer the baking sheet to the refrigerator where the chocolate will harden more quickly. 
  3. Once the chocolate has hardened follow the same procedure to melt the white chocolate. Use a spoon to drizzle stripes of white chocolate over the chocolate covered marzipan. Return the truffles to the fridge to let the white chocolate harden.  
  4. Makes about 20 truffles depending on size.
