Masala Chips

Masala Chips are potato slices coated in a spiced batter made of gram flour, cornflour, and various seasonings including tandoori masala and chili powders. The thickly sliced potatoes are dipped in this batter to evenly coat before deep-frying, resulting in crispy, flavorful chips served with green chutney as a spicy accompaniment.

Description

In this recipe, potatoes are peeled and sliced thick to create substantial chips. A batter is prepared from gram flour, cornflour, water, and a blend of spices including salt, garlic powder, chili powders, black pepper, and tandoori masala. The spices give the chips a distinctive masala flavor that goes beyond plain fried potatoes.

The chips are coated in the batter to ensure they are well covered with the spice mixture, then deep-fried in hot oil until crispy. The batter thickens as it cooks, creating a crunchy exterior layer around the tender potato interiors. Breaking the chips apart gently while cooking prevents clumping.

Masala Chips are commonly served with green chutney, which adds a fresh and herby contrast to the spice-coated fried potatoes. This recipe combines textured crispness, spicy flavors, and a satisfying snack appeal.

Ingredients

Servings
  • 400 g Chips
  • 50 ml water
  • 1 tbsp cornflour
  • 2 tbsp gram flour
  • 1 tsp salt
  • ½ tsp garlic powder
  • ½ tsp chilli powder
  • 1 tsp black pepper
  • ½ tsp chilli pepper crushed
  • 1 tsp tandoori masala

Instructions

  1. In a large bowl whisk until all the ingredients are well combined
  2. Peel the potatoes into thick slices before adding into the batter and evenly coating each chip
  3. Heat up a large pot of oil until hot then add in the chips – if the batter gets too runny add in more gram flour
  4. Allow the chips to cook for 2 minutes undisturbed then gently break the chips apart before cooking for a further 5 minutes
  5. Serve alongside green chutney and enjoy!

Notes

  • Adjust the amount of gram flour in the batter if it becomes too runny to maintain proper coating.
  • Serve the chips promptly for the best crispness, alongside green chutney as suggested.
  • When frying, break chips apart gently after a couple of minutes to prevent sticking.
