Mashed Beans with Fried Eggs and Fresh Oregano
Description
Mashed Beans with Fried Eggs and Fresh Oregano begins with soaking white beans overnight, followed by boiling until tender in salted water. The beans are blended with some of their cooking water to create a smooth, creamy consistency, seasoned to taste with salt. Meanwhile, an egg is fried in olive oil until cooked to preference.
The dish is assembled by placing the fried egg atop the mashed beans, garnished with fresh oregano leaves, salad greens, and a dusting of sweet paprika. The combination provides creamy, savory mashed beans complemented by the runny or firm yolk of the egg and herbal brightness from oregano. The paprika adds a mild smoky warmth.
This straightforward preparation works well at breakfast or a light lunch, delivering protein and gentle flavors that balance each other. The optional leek ash can add an additional smoky element.
