Mast O Kadoo (Persian Yogurt Zucchini Dip)
Description
Mast O Kadoo blends shredded zucchini that is carefully drained to remove water, with plain Greek yogurt to create a thick, creamy dip. The addition of minced garlic, salt, black pepper, and fresh dill provides aromatic, savory, and herbal layers typical of Persian cuisine. Shredding zucchini finely or coarsely controls the dip’s texture, with finely shredded zucchini yielding a smoother consistency.
The yogurt base offers a tangy creaminess that complements the mild sweetness of the zucchini. Garlic's flavor develops by letting minced cloves rest before mixing, ensuring a mellow depth. Fresh dill introduces a distinctive herbal note to brighten the dip.
This dip is served chilled, making it a cooling side dish often enjoyed with warm bread or as part of a spread. It pairs well with other fresh or grilled vegetable dishes. Adjusting salt and pepper seasoning before chilling ensures the flavors balance process well.
To achieve ideal texture, squeezing out zucchini moisture is essential. If the dip thickens too much after chilling, it can be thinned with chilled water or additional yogurt to preference.
Ingredients
- 1 zucchini shredded
- 1 clove garlic minced
- 1 tsp kosher salt
- ¼ tsp black pepper
- ½ cup dill chopped, fresh
- 2 cups Greek yogurt
Instructions
- Shred the zucchini and place it in a cheesecloth to drain excess water.
- Squeeze out the excess juice from the zucchini.
- Mix the zucchini with garlic, salt, black pepper, fresh dill and yogurt
- Taste and add more salt if needed.
- Chill in the fridge and serve with warm bread.
Notes
- Let minced garlic rest for 10 minutes before mixing to enhance its flavor without harshness.
- Use plain, unsweetened Greek yogurt for a thick creaminess and authentic savory taste.
- Squeeze shredded zucchini thoroughly to remove excess water and avoid a watery dip.
- Taste and adjust salt and pepper before chilling, as flavors intensify while resting.
- Chill the dip for at least 30 minutes; overnight chilling deepens flavors further.
- If the dip becomes too thick after chilling, thin it with a little cold water or extra yogurt for desired texture.
