Matcha Granita

Matcha Granita is a refreshing icy treat made by dissolving granulated sugar and ceremonial matcha powder in hot water, then freezing and scraping it to form delicate ice crystals. The technique creates a light, flaky texture that highlights the vibrant green tea flavor. This frozen dessert offers a cool way to enjoy matcha's grassy, slightly bitter notes in a simple preparation without added dairy or cream.

Description

The Matcha Granita starts by dissolving sugar and ceremonial grade matcha into hot water cooled to 175°F. The mixture is frozen in a shallow container, then scraped periodically with a fork to break up the ice as it forms. This manual scraping produces fluffy, crystalline flakes rather than a solid block of ice, giving the granita its characteristic texture. The end result is a light, chilled dessert that showcases the earthy and slightly sweet flavor of matcha powder concentrated in icy form.

Its bright green color and clean flavor make it a refreshing palate cleanser or finish to a meal. Because it contains just water, sugar, and matcha, it’s a simple, refreshing treat especially suited to warm weather or as a light dessert option after heavier dishes.
