Mazapán

Mazapán is a smooth and sweet peanut candy made by finely grinding roasted peanuts with powdered sugar, then pressing the mixture into molds to set. The texture is dense yet tender, and the recipe relies on minimal ingredients. Careful processing ensures the mazapán holds together without cracking.

Description

This mazapán recipe blends roasted unsalted peanuts and powdered sugar into a fine, powdery mixture using a food processor. The mixture is then packed firmly into small cookie molds—approximately 2¼ inches in diameter—to form individual rounds. Pressing firmly ensures each piece holds shape without crumbling. Once unmolded carefully, the mazapán is ready to serve or wrap for later.

The candy has a buttery peanut flavor with sweet notes from the sugar, offering a dense yet delicate bite. The fine consistency from processing helps avoid large peanut chunks that could cause cracking or uneven texture.

You can use different sized molds to adjust portion size, though yield will vary accordingly. A blender may be used but will produce a coarser texture, less smooth than a food processor. Handle the mazapán gently during shaping and removal from the mold to maintain the round shape.

Ingredients

Servings
  • 2 cups peanuts roasted unsalted
  • 1 ½ cups powdered sugar

Instructions

  1. Add the peanuts and powdered sugar to a food processor. Pulse until you get a fine and powdery texture.
  2. Place a sheet of parchment paper on a flat surface and arrange a 2-inch cookie cutter mold on top.
  3. Scoop 2 ½ tablespoons of the ground mixture into the cookie mold and begin pressing it down with your fingers or the back of a spoon. Press firmly to really pack the peanut mixture into the mold.
  4. Remove the mazapán very gently from the mold by lightly pushing down the sides as you slide the mold out. Don’t push from the center.
  5. Carefully transfer the mazapán onto a plate to serve or wrap in cling wrap to eat later.

Notes

  • Use a food processor rather than a blender to achieve a fine, smooth texture without large peanut chunks.
  • Choose mold size carefully, as it affects mazapán portions and yield.
  • Press firmly into molds and remove gently to prevent cracking or breaking.
