  • 1 1/2 pounds ground beef 80/20 or similar
  • 1 cup finely chopped onion
  • 2 cloves garlic minced
  • 1/2 cup breadcrumbs
  • 1 cup ketchup divided
  • 1 tablespoon Worcestershire sauce 
  • 1 large egg lightly beaten
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350°F. Grease a 12-cup muffin pan with cooking spray or melted butter.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and cook for 5 minutes until softened. Add the minced garlic and sauté for another 30 seconds until aromatic.
  3. In a large bowl, combine the cooked onion and garlic, ground beef, breadcrumbs, 1/2 cup of ketchup, Worcestershire sauce, egg, oregano, salt, and pepper. Mix until well combined.
  4. Divide the meat mixture evenly among the 12 muffin cups, pressing gently to pack the mixture.
  5. Top each meatloaf muffin with a bit of the remaining ketchup. Transfer the muffin pan to the oven and bake for 25 minutes or until cooked through. The internal temperature should reach 160°F.
  6. Let the muffins rest for about 5 minutes before serving.
