Mediterranean Chicken Wrap
Description
This Mediterranean Chicken Wrap brings together grilled chicken breast sliced thinly, diced vegetables including red onion, cucumber, cherry tomatoes, pickles, and chopped spinach, all nestled inside soft lavash bread. The spread of creamy hummus and the homemade tzatziki sauce enrich the wrap with moisture and tang. Crumbled feta cheese adds a salty accent, while fresh dill enhances the herbal notes.
The careful layering of hummus, chicken, tzatziki, and vegetables helps keep the wrap intact and well-balanced in flavor and texture, combining creamy, crisp, and savory elements.
The wrap is suitable for a quick lunch or light dinner and can be made ahead in the morning provided it is refrigerated and consumed within the same day to avoid sogginess. Substitutions in wraps are flexible and vegetables can be varied to taste.
Following the layering sequence is important to maintain the structure and prevent the wrap from falling apart when eating.
Ingredients
- 4 oz chicken breast grilled
- 1 tbsp red onion chopped
- 2 tbsp hummus
- 1 lavash bread Joesph’s brand
- ¼ cup cherry tomato quartered
- 2 tbsp feta cheese crumbled, fat free
- 2 tbsp cucumber chopped
- 2 tbsp pickles chopped
- ½ cup spinach chopped (or lettuce)
- ¼ cup tzatziki sauce
For homemade tzatziki sauce:
- ¼ cup Greek yogurt fat free
- 1 tsp lemon juice
- 1 dill diced finely, large sprig
- 1 tbsp pickle or cucumbers, diced
Instructions
- This recipe assumes you already have your chicken prepared and cooked. If you need to cook your chicken, do that first. Then slice into thin strips.
- Dice red onion, pickles, and spinach (or lettuce). Thinly slice cucumber. Quarter tomatoes.
- If you're making homemade tzatziki, just mix the ingredients together in a small bowl.
- Spread hummus on a Lavash wrap to act as glue. Then, sprinkle on dill, onion, and feta. You want to keep everything toward the center of the wrap.
- Add thin strips of chicken to the center. Then spread with tzatziki, which will act as another layer of glue.
- On top of the tzatziki, add cucumber, tomato, pickles, and lettuce. Then, wrap like a burrito and enjoy!
Notes
- Consume the wrap within the same day to prevent the bread from becoming soggy, ideally by lunchtime if prepared in the morning.
- Any type of tortilla or wrap can substitute for lavash; some low-carb options may require doubling to hold all fillings.
- Proper layering of ingredients, starting with hummus then chicken, tzatziki, and vegetables, helps keep the wrap from falling apart.
