Ingredients
- 1 pound cooked and cooled pasta
- 1 cup sliced mixed olives
- 1 (8-ounce) jar sun-dried tomatoes drained with the oil reserved
- 6 ounces thinly sliced salami
- 4 ounces cubed or crumbled feta cheese
- 1 ½ cups diced English or Persian cucumber about 1 medium cucumber
- 1 (5-ounce) container chopped baby kale
Dressing
- ¼ cup olive oil or reserved oil from the sun-dried tomatoes
- ¼ cup red wine vinegar
- 1 tablespoon minced fresh oregano or 1 teaspoon dried oregano
- 3 tablespoons fresh lemon juice about 1 lemon
- 1 tablespoon lemon zest about 1 lemon
- 1 tablespoon minced garlic
- ¼ teaspoon ground black pepper
- ½ teaspoon salt

Instructions
- Add 1 pound cooked and cooled pasta, 1 cup sliced mixed olives, 1 (8-ounce) jar sun-dried tomatoes drained with the oil reserved, 6 ounces thinly sliced salami, 4 ounces cubed or crumbled feta cheese, 1 ½ cups diced English or Persian cucumber, and 1 (5-ounce) container chopped baby kale to a large bowl and toss until combined.
- Make the dressing by whisking ¼ cup olive oil or reserved oil from the sun-dried tomatoes, ¼ cup red wine vinegar, 1 tablespoon minced fresh oregano, 3 tablespoons fresh lemon juice , 1 tablespoon lemon zest, 1 tablespoon minced garlic , ¼ teaspoon ground black pepper, and ½ teaspoon salt together in a small bowl until fully combined.
- Pour the dressing over the salad and toss again until everything is evenly coated in the dressing. Serve immediately.
