Ingredients
For the salad
- 3 cups sliced cucumbers seeds removed
- 2 cups cherry tomatoes halved
- 1/4 cup red onion thinly sliced
- 1 green bell pepper cored, seeded and diced
- 1/3 cup kalamata olives pitted and halved
- 1/4 cup fresh parsley chopped, plus more for garnish
- 1/3 cup feta cheese crumbled
For the dressing
- 6 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 2 teaspoons Dijon mustard
- salt and pepper to taste
- 1/4 teaspoon dried oregano
- 1/4 teaspoon garlic powder
Instructions
For the dressing
- In a small bowl, whisk together the dressing ingredients.
For the salad
- Place the cucumbers, cherry tomatoes, red onion, green bell peppers, kalamata olives and parsley in a large bowl.
- Pour the dressing over the vegetables. Toss gently to coat. Sprinkle the feta cheese over the salad.
- Garnish with additional chopped parsley if desired, then serve immediately.
