This amazing melt-in-the-middle Chocolate Pudding is quick and easy to prepare. Steam the pudding in your slow cooker or a pot and serve with rich chocolate sauce – delicious!

Ingredients
For the pudding
- 125 g (½ cup + 1 tbsp) softened butter unsalted
- 125 (scant ⅔ cup) sugar golden caster preferably
- 100 g (scant 1 cup) self raising flour
- 4 tbsp cocoa powder unsweetened
- 2 tsp instant coffee , optional
- 2 eggs
- 1 tsp vanilla bean paste or extract
To fill
- 4-5 chocolate truffles plus extra to decorate
Chocolate sauce
- 150 g (1 cup) dark chocolate chips
- 120 ml (½ cup) cream, single /pouring
- 1 tsp vanilla bean paste or extract
- 1-2 tbsp Baileys or other liqueur (optional)

Instructions
Make the pudding
- Grease a 2 pint pudding basin (or small glass bowl) and place a small piece of baking paper in the centre.
- Add all the pudding ingredients to a bowl and beat together until you have a smooth batter.
- Spoon half into the prepared bowl and add 4-5 chocolate truffles in the middle.
- Cover with remaining batter and level.
- Cut a square piece of foil, make a pleat in the middle and cover the bowl, securing with an elastic band. Fashion a handle with string so you can lift the pudding easily.
- Put a jam jar lid in the base of your slow cooker and place the pudding on top.
- Add boiling water to the slow cooker to come halfway up the bowl. Cover and cook on high for 90 minutes or until the pudding feels firm to the touch. Keep warm.
Make the sauce
- Heat the chocolate chips and cream, stirring, until you have a smooth chocolate sauce. If the sauce is too thick you can add a little more cream or milk. Stir in the Baileys and vanilla extract.

- Carefully turn the pudding out of the bowl and serve warm, drizzled with the
