Description

The ceviche starts by salting finely diced red onion to soften its bite. Fresh sushi-grade albacore tuna is cut into small cubes and combined with jalapeño and freshly squeezed lime juice, which “cooks” the fish by gently denaturing proteins. The mixture is refrigerated to marinate for 30 minutes up to 4 hours, allowing the flavors to meld and the fish to firm slightly.

Just before serving, chopped cilantro is added along with additional salt and black pepper to taste. The result is a bright, citrus-acid cured seafood dish with moderate heat from jalapeño and fresh herbal highlights from cilantro. This ceviche is typically enjoyed scooped up with tortilla chips as a flavorful appetizer or light snack.

  • ½ c red onion finely diced
  • 1 teaspoon kosher salt
  • 12 oz albacore tuna ¾ lb or 2 cups once cubed, sushi grade, ¼" diced
  • 1-2 jalapeño very finely diced
  • 2 lime Minimum ½ c juice, use more limes if needed, juiced
  • ½ c cilantro chopped
  • salt to taste
  • black pepper to taste

Instructions

  1. In a medium bowl, combine the red onion and salt. Let the onion macerate (soften) while preparing the tuna and jalapeño.
  2. Add cubed tuna, jalapeños and lime juice, toss gently and marinate in fridge ½ hour or up to 4 hours.  
  3. Just before serving, add cilantro and season to taste with extra salt and black pepper.
  4. Serve with tortilla chips or other crispy bites to scoop up the chunky and delicious tuna ceviche.

Notes

  • Adjust jalapeño quantity to control the heat before serving.
  • Season salt levels to taste to balance the flavors.
