Ingredients

  • 1 cup black beans dried (90 grams)
  • cup sweet potato cubed (225 grams)
  • 1 cup carrot dice (125 gr
  • 3 large tomato or 4 smaller ones
  • 1 large red onion
  • 2 cloves garlic
  • 2 talks celery
  • 1 red chili pepper
  • ½ cup tomato passata
  • 1 cup broth MM healing
  • or 1 or 1 cup water
  • + 3 + 3 tbsp mushroom powder
  • 2 teaspoons oregano dried
  • 1 tbsp paprika powder
  • 1 tbsp coriander seeds ground
  • 1 tsp ground cumin seed
  • 2 tbsp extra virgin olive oil
  • 1 large handful cilantro fresh

Instructions

  1. Soak the beans in plenty of water for at least 4 hours.
  2. Chop the onion and fry on a low heat with some oil. For fatfree bake with a little water 'Medical Medium style'.
  3. Press the garlic. Cut the red pepper into small pieces and add both.
  4. Cut the celery stalks into slices and add.
  5. Fry all the herbs and spices briefly with the onions. Deglaze with the stock or water and then add the mushroom powder.
  6. Rinse the beans in a sieve and add.
  7. Put the lid on the pan and bring to the boil. Then turn down to a simmer and let it simmer with the lid slightly ajar.
  8. Wash and cut the tomato into small pieces and add it with the tomato passata. Let it stew for half an hour.
  9. Peel the sweet potato and cut into pieces. Clean the carrot and cut into slices. Add both.
  10. Let it simmer for at least another half hour with the lid on. Stir occasionally. Is it still too wet? Leave the lid slightly ajar. Is it getting too dry? Add some water.
