Description

Mexican Cheese Stuffed Meatballs begin with mixing ground turkey, green chilies, oats (or breadcrumbs), an egg, and spices including Mexican or Mediterranean oregano, garlic powder, salt, and cumin. The mixture forms the meatball base, binding and flavoring the protein.

Cubes of pepper jack cheese, about half an inch in size, are encased inside each meatball. This creates pockets of melted cheese throughout. The meatballs are arranged in a baking pan, covered in salsa verde or tomatillo salsa to provide moisture and tang, then baked covered for most of the cooking time followed by uncovered to brown slightly.

The final dish integrates spicy, meaty flavors with creamy, melted cheese centers, balanced by the salsa's brightness. This preparation is appropriate as a main dish or party appetizer.

  • 1 lb ground turkey or other ground meat of choice
  • 4 oz green chilies
  • 1/2 cup oats or breadcrumbs, ground
  • 1 large egg
  • 1 tsp Mexican oregano or traditional (Mediterranean) oregano
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp cumin
  • 8 oz pepper jack cheese cut into 1/2-inch cubes (See Note 1)
  • 3 cups salsa verde or tomatillo salsa

Instructions

  1. Preheat oven to 450°F.
  2. To a large mixing bowl, add ground turkey, green chilies, ground oats, egg, oregano, garlic powder, salt and cumin. Use your hands to thoroughly combine ingredients.
  3. Next, press each cheese cube into cookie scoop with turkey mixture and then mold the meat mixture around to completely cover the cheese. Makes 16 meatballs.
  4. Place meatballs in a greased baking pan. Pour salsa verde or tomatillo salsa over the meatballs, then cover pan with aluminum foil to seal. Reduce oven temperature to 350°F and bake covered for 25 minutes, remove foil, and bake uncovered for 5 minutes.

Notes

  • Pepper jack cheese can be prepared by cutting cheese sticks into cubes or chopping a block of cheese into 1/2-inch pieces.
  • Both cheese sticks and blocks work, with equal yields when cut into appropriate cubes for stuffing the meatballs.
