  • ½ to 1 to 1 cup corn thawed (or fresh corn kernels, frozen
  • 1 cup tomato chopped or halved cherry tomatoes
  • ½ to 1 to 1 cup jicama peeled and chopped or sliced
  • 1 cup cucumber chopped
  • ½ cup cilantro chopped, fresh
  • 1 cup cheddar cheese cubed or Monterey Jack cheese
  • avocado optional, diced

Vinaigrette:

  • cup olive oil
  • ¼ cup lime juice freshly squeezed
  • 4 tablespoons red wine vinegar
  • 2 to 3 to 3 tablespoons honey
  • ¼ cup cilantro chopped, fresh
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. In a large bowl, toss together all the salad ingredients.
  2. Combine all the dressing ingredients together in a jar or blender and shake/process until well-combined. Add additional salt and pepper to taste, if needed.
