Mexican Corn Salad Recipe

This Mexican Corn Salad uses grilled corn kernels mixed with lime juice, chili powder, cotija cheese, cilantro, mayonnaise, garlic salt, and black pepper. The corn is charred in the husks to smoky-sweet perfection before being combined with creamy, tangy, and spicy ingredients for a flavorful side dish with a balance of texture and taste.

Description

The salad starts by grilling whole corn on the husk over medium-high heat until the husks are charred and the kernels inside are cooked and smoky. Once cooled and husked, the kernels are cut off into a bowl. They are then tossed with fresh lime juice, chili powder, crumbly cotija cheese, chopped cilantro, mayonnaise, garlic salt with parsley flakes, and black pepper. This combination results in a creamy, slightly spicy salad with bright, fresh citrus notes and a rich, cheesy finish.

The char grilling adds a smoky depth to the natural sweetness of the corn, which contrasts with the tangy and creamy dressing. The cotija cheese provides a salty, crumbly texture that complements the soft corn kernels. Additional cilantro and lime can be added to taste for an extra burst of freshness and acidity.

This salad is a popular accompaniment in Mexican cuisine, suitable for serving warm or at room temperature alongside grilled meats or as part of a casual meal. It highlights the natural flavor of corn enhanced by traditional seasoning.
