Mexican Keto Ground Beef Casserole

This Mexican Keto Ground Beef Casserole layers spiced ground beef with riced cauliflower and bell peppers, all bound by cheddar cheese, salsa, and creamy cheeses. Baked until bubbly with a golden cheese topping, the casserole delivers a satisfying low-carb meal featuring savory taco seasoning and fresh cilantro garnish.

Description

The Mexican Keto Ground Beef Casserole combines ground beef cooked with taco seasoning alongside sautéed riced cauliflower and thinly sliced bell peppers. This combination provides a hearty base with a mix of textures from tender beef and softened vegetables. The addition of cheddar cheese, salsa, heavy cream, and cream cheese creates a creamy and slightly tangy sauce that coats the ingredients before baking.

Cooking begins on the stove in an oven-safe pan, allowing flavors to meld as the cheese melts and the sauce thickens. After assembling with an extra layer of cheddar cheese on top, it is baked until bubbly and lightly golden. The fresh cilantro sprinkled on top adds a bright herbal note that complements the southwestern spices.

This casserole suits a keto or low-carb diet while delivering comfort food qualities through rich cheese, seasoned meat, and vegetable mix. It can be eaten on its own or paired with a simple green salad for a balanced meal.

Ingredients

Servings
  • 1 pound ground beef 85% fat
  • 3 teaspoons taco seasoning divided
  • 2 cups riced cauliflower
  • 1 bell pepper thinly sliced
  • 1 cup cheddar cheese packed and divided, grated
  • 1 cup salsa
  • 4 tablespoons heavy cream
  • 2 ounces cream cheese
  • 1/2 teaspoon salt
  • cilantro for garnish

Instructions

  1. Preheat your oven to 375°F.
  2. Heat a large, oven-safe pan on medium-high heat and cook the beef until no longer pink. Add in 2 teaspoons of the taco seasoning and cook for 1 more minute. Transfer to a bowl. Do not wipe the pan.
  3. Add the cauliflower rice and the bell pepper to the hot pan and cook until lightly browned, about 5 minutes. Add the remaining 1 teaspoon of taco seasoning and cook for another minute.
  4. Add the beef back into the pan, and stir to combine.
  5. Add 1/2 cup of the cheddar cheese and all remaining ingredients except the cilantro, and stir until the cream cheese melts and everything is combined.
  6. Bring to a boil and simmer for 3-4 minutes, stirring frequently, just until the mixture thickens.
  7. Remove from heat and sprinkle on the remaining 1/2 cup of cheddar cheese. Bake until bubbly, about 15 minutes.
  8. Sprinkle with cilantro and serve hot.
