Mexican Street Corn Dip
Description
This dip recreates the flavors of Mexican street corn with a creamy base of sour cream or yogurt and mayonnaise blended with lime juice, chili powder, and cumin. Fresh, frozen, or canned corn is sautéed or broiled until lightly charred, imparting a smoky note that highlights the sweetness of the corn kernels. The cooled corn is combined with diced green chilies, finely chopped green onions, fresh cilantro (or parsley), and crumbled cotija or feta cheese for added texture and tang.
The finished dip is creamy and rich, with a balance of smoky, tangy, and mildly spicy elements. Chili powder sprinkled on top provides an extra visual and flavor accent. It can be served as an appetizer or side dish alongside tortilla chips, making it a flavorful accompaniment to various Mexican-inspired meals.
Ingredients
- 4 cups corn (fresh, frozen or canned drained)
- 3 tablespoons sour cream (or yogurt)
- 3 tablespoons mayonnaise (or yogurt or sour cream)
- lime juice of 1
- ½ teaspoon chili powder
- ½ teaspoon cumin
- ¼ teaspoon salt
- 1 4 oz diced green chilies drained, canned
- ¼ cup cilantro or parsley, chopped
- 4 green onions (finely chopped)
- ½ cup cotija cheese (or feta, crumbled)

Instructions
- In a cast iron pan or regular frying pan on medium heat sauté the corn until lightly charred, approximately 5 minutes. A cast iron pan will provide the best char, or spread the corn out on a baking tray and broil in the oven for 2-3 minutes or until lightly charred. Set aside to cool.
- In a large bowl mix the yogurt, mayonnaise, lime juice, chili powder, cumin, and salt until combined.
- Add in the cooled corn, green onions, parsley, and cheese. Stir until well combined.
- Serve sprinkled with additional chili powder sprinkled on top, parsley and cheese and with tortilla chips. Enjoy!
