Ingredients
- 1 cup butter
- 2 cups all-purpose flour sifted
- 1 teaspoon vanilla extract
- 1/2 teaspoon lime zest
- 1/2 cup pecans or walnuts, chopped
- 1/2 cup icing sugar plus some for coating
Instructions
- Preheat oven to 350 degrees, and line a baking sheet with parchment paper
- Add the butter and sugar into a bowl and beat with a hand mixer until the mixture is creamy.
- Add the vanilla extract, flour, lime zest, and pecans or walnuts and mix until the cookie dough comes together.
- Form the cookie dough into 1-inch balls then place them onto a lined baking and slightly press the top. You can also roll them out into rings or crescents.
- Bake for 10-12 minutes or until the cookies are slightly golden brown.
- Remove from the oven and allow the cookies to cool.
- Roll into the icing sugar to coat.
