With only a few easy ingredients and a couple of minutes, microwave omelettes are perfect for breakfast all week long!

Ingredients
- 2 large eggs
- salt and pepper to taste
- 1 teaspoon butter
- 2 tablespoons shredded sharp cheddar cheese
- 2 tablespoons mix-ins below

Instructions
- Whisk eggs with salt & pepper.
- Spray a coffee mug with cooking spray (or rub with oil).
- Place butter in the bottom of the mug.
- Add eggs and microwave 45 seconds.
- Stir in half of the cheese and all of the mix ins. Microwave an additional 35-45 seconds or until the eggs are cooked through.
- Top with remaining cheese and rest 30 seconds.
Notes
- Optional mix-ins:
- green onions, bell peppers, cooked sausage, cooked bacon, cooked mushrooms, ham, spinach, asparagus, broccoli
- Cook times will vary based on your microwave and the shape of the mug you choose. Check the omelette a little bit early or add extra time if needed.
- Whisk the eggs with a fork until they are a pale yellow color, you should see no bits of white or yolk.
- Add a teaspoon or so of water or milk to make the eggs extra fluffy.
- Add the mix-ins once the eggs are partially set to keep them from sinking to the bottom.
- Do not overcook. the eggs will continue to cook once removed from the microwave.
