Mint Tzatziki Recipe
Description
This recipe starts by grating mini or English cucumbers finely, then manually squeezing out their liquid to prevent a watery tzatziki. The cucumbers are combined in a bowl with thick plain yogurt, minced fresh mint, lemon juice, freshly grated garlic, and sea salt. The mixture is stirred well and refrigerated for at least thirty minutes to allow the flavors to meld and develop a balanced taste.
The resulting tzatziki is creamy and cool with a fresh taste from mint and lemon that complements the mild yogurt base and pungent garlic. It works well as a dip for vegetables or pita bread and as a condiment for grilled meats or Mediterranean dishes.
The sparse ingredient list focuses on maintaining a good texture while balancing acidity, herbal freshness, and garlic sharpness, typical of this classic condiment.
Ingredients
- 3 mini cucumber or 1 English cucumber
- 1 cup PLAIN yogurt thick
- ¼ cup mint minced
- 2 tablespoons lemon juice
- 1-2 cloves garlic grated with a microplane
- ¼ teaspoon salt sea salt
Instructions
- Grate the cucumbers using the small holes on your grater then squeeze as much liquid from the grated cucumbers as possible. This is done easiest by picking up a small pile, holding it over the sink, and squeezing it hard with your hands.
- Put the grated cucumber into a bowl and add the remaining ingredients to the bowl.
- Mix well then let the tzatziki rest for at least half an hour for the flavors to blend together.
