Miso Udon Noodle Soup
Description
Miso Udon Noodle Soup combines cooked udon noodles with a broth made by sautéing garlic, chopped spring onions, and ginger paste in vegetable oil, then adding sliced shiitake mushrooms and water. Once the mushrooms soften, red miso paste and dried seaweed are stirred into the broth and removed from heat. The flavorful broth is poured over the drained noodles and served immediately.
The soup balances the chewy texture of udon noodles with tender mushrooms and the fragrant mix of garlic and spring onion. The miso paste provides a deep, salty umami flavor complemented by the earthiness of dried seaweed, making the soup filling yet light.
This dish can be served as a light lunch or dinner. Quick cooking and simple ingredients make it accessible for home cooks seeking a warm bowl with subtle Asian flavors.
