Mushroom and Goat Cheese Toasts

Mushroom and Goat Cheese Toasts feature sautéed mixed mushrooms and shallots cooked with thyme and sherry, spooned onto toasted baguette slices spread with a chive goat cheese mixture. The mushrooms are richly browned and seasoned, while the toasts are crispy with a subtle garlic rub, making a savory appetizer or snack with contrasting textures.

Description

This recipe combines the earthiness of shiitake and chanterelle mushrooms with the tangy creaminess of goat cheese blended with fresh chives. The mushrooms are cooked slowly in butter with shallots until deeply caramelized, then finished with fresh thyme and a splash of sweet sherry that intensifies their flavor. Meanwhile, a French baguette is sliced and toasted with olive oil and sea salt for a crisp base. Each toast is rubbed with garlic to add a fragrant layer beneath the creamy cheese spread.

The final assembly involves spreading the herbed goat cheese on each warm toast followed by a generous topping of the buttery mushroom mixture. The contrast between the crunchy toasts, the smooth cheese, and the tender, savory mushrooms creates a balanced bite. The garlic rubbing on the bread provides an aromatic underpinning that complements the other ingredients.

These toasts can be served warm as an appetizer or light snack. The use of specialized mushrooms adds seasonal interest while the cooking method enhances their natural umami. The recipe leverages layering textures and flavors through toasting, sautéing, and combining creamy and robust components.

Ingredients

Servings
  • 4 tablesppons butter unsalted
  • 1 pound mushrooms a combination of shiitake and chanterelle, cleaned, tip end removed, and sliced
  • 2 shallot thinly sliced and chopped
  • 1 tablespoon thyme leaves chopped
  • 3 tablespoons sweet sherry
  • 4 tablespoons chives finely chopped, plus some for garnish
  • 1 baguette French
  • olive oil
  • sea salt Fleur de Sel
  • 1 garlic clove
  • cup goat cheese at room temperature
  • black pepper ground

Instructions

  1. In a small bowl, mix the goat cheese and the 4 tablespoons of fresh chives and set aside.
  2. Preheat the oven to 400F.
  3. In a large skillet melt the butter over medium heat. Stir in the mushrooms with the shallots and cook, stirring only occasionally. Once the mushrooms are golden brown, about 10 minutes, stir in the thyme, and continue cooking until well browned, another 5 to 10 minutes. Season with salt and pepper.
  4. Stir in the sherry into the mushrooms and cook, stirring until all the sherry is evaporated, around 1 minute.
  5. Cut the baguette in half. Halve each half baguette lengthwise as you were to make a sandwich. Cut crosswise into fourth to make 16 equal pieces.
  6. Arrange the cut-side-up baguette pieces on a cookie sheet covered with parchment paper. Drizzle with olive oil and sprinkle with sea salt. Bake until golden on the edges for about 6 minutes.
  7. Remove the toasts from the oven and immediately rub them with the garlic pressing down so the oils from the garlic are released on the baguette.
  8. Smear each baguette with about one tablespoon of goat chives cheese.
  9. Warm the mushrooms back on high heat for about a couple of minutes. Spoon the mushrooms mixture on top of the chive goat cheese toasts, and sprinkle with chopped chives and a couple of grinds of fresh black pepper.
  10. Serve immediately.
