Mustard Cream Sauce

Mustard Cream Sauce is a smooth, thickened sauce made from butter, flour, milk, cream, and two types of mustard. It offers a mildly tangy flavor with a creamy texture, suitable for dressing meats and vegetables.

Description

This Mustard Cream Sauce starts by cooking butter and flour together to make a roux, which is thickened with milk through constant whisking until it boils and thickens. Heavy cream is then blended in along with white vinegar, dry mustard, Dijon mustard, dried parsley, salt, and ground black pepper, creating a creamy and tangy sauce with herbal notes from parsley.

The sauce can be served immediately to accompany dishes requiring a rich, mustard-flavored element, such as roasted meats, steamed vegetables, or mashed potatoes. Its smooth and velvety nature makes it a versatile sauce component.

A practical tip includes substituting fresh parsley for dried by using one tablespoon of chopped fresh parsley, which will add a brighter herbaceous flavor and fresh aroma to the sauce.

Ingredients

Servings
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup milk
  • 1/4 cup heavy cream
  • 1 tablespoon white vinegar
  • 1 tablespoon mustard powder dry
  • 1 tablespoon Dijon mustard
  • 1 teaspoon parsley dried
  • 1 1/2 teaspoons salt
  • black pepper ground

Instructions

  1. Melt the butter in a saucepan over moderate heat. Add the flour and mix thoroughly.
  2. Add the milk and cook over high heat, stirring constantly with a whisk, until the sauce thickens and comes to a boil. Reduce the heat and simmer for 3 minutes.
  3. Beat in the cream, vinegar, dry mustard, Dijon mustard, dried parsley, salt, and a few grinds of pepper. Serve immediately.

Notes

  • Use 1 tablespoon chopped fresh parsley instead of dried for a fresher flavor.
