Mustard-Roasted Potatoes Recipe

Ingredients

  • 2 pounds potatoes scrubbed
  • 3 tablespoons olive oil
  • 1/2 cup whole-grain mustard
  • 1/4 cup butter melted
  • 3 cloves garlic crushed
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • 2 prigs rosemary leaves finely chopped
  • salt and pepper

Instructions

  1. Preheat the oven to 350°F. Cut the potatoes into large 2-inch chunks.
  2. Mix the olive oil, mustard, melted butter, garlic, lemon zest, lemon juice, rosemary, and salt and pepper in a large bowl.
  3. Add the potatoes and, using a spoon, coat them with the mustard mix.
  4. Spread the potatoes out on a baking sheet. Roast in the oven for 40 minutes, or until the potatoes are crispy on the outside and soft and fluffy on the inside.
