Nice Cream Cookie Sandwiches
Description
Nice Cream Cookie Sandwiches are made by blending frozen bananas into a creamy base and dividing it to flavor with vanilla, cocoa powder, and frozen strawberries. Each flavored nice cream is then spread between pairs of chocolate chip cookies to form sandwiches. The bananas provide a smooth, naturally sweet texture that mimics ice cream, while the strawberry component adds a fruity note and the cocoa brings richness. The chocolate chip cookies add crunch and chewiness for contrast.
The preparation requires a high-powered food processor to achieve a smooth blend. These sandwich treats are ideal for quick frozen desserts and can be customized with different fruits or flavor extracts. Wrapping and freezing the sandwiches helps them firm up for easier handling and less mess while eating.
Keep bananas sliced before freezing for easier processing, and add a small amount of milk for silkier texture if desired. The recipe also suggests alternatives to customize flavors and enhance the nice cream experience.
Ingredients
- 2 banana cut in to chunks and frozen for 3 hours
- 4 strawberry frozen
- 1 tbsp cocoa powder
- 1 tsp vanilla extract
- 20 Chocolate Chip Cookies
Instructions
- Put the 2 Banana (frozen) into a food processor and blend until smooth. You will need to stop it a couple of times and scrape the sides down and start blending again.
- Take ⅔ of the mixture out. With the remaining mixture in the food processor, add 4 Frozen strawberries and blend until smooth.
- Halve the mixture that you took out and add 1 teaspoon Vanilla extract to one and 1 tablespoon Cocoa powder to another. You should now have 3 flavours of nice cream - vanilla, strawberry and chocolate.
- Divide the nice cream between half of the 20 Chocolate chip cookies and then put another cookie on top to make a sandwich.
Notes
- Always keep sliced bananas frozen for quick preparation of nice cream.
- Adding a little milk can give a silkier texture but use sparingly.
- Different frozen fruits like blueberries or raspberries can be used for flavor variations.
- Adding flavor extracts such as orange or mint can change the taste profile.
- Use a high-powered food processor and scrape down the sides frequently to achieve a smooth cream.
- Wrap assembled sandwiches and freeze for an hour to set and reduce mess when eating.
