Ingredients

  • ½ teaspoon cinnamon (more if preferred)
  • tablespoon lemon juice or white vinegar (to make the pretreatment solution)
  • 1 quart /liter of water (to make the pretreatment solution)

Instructions

  1. Wash and dry the apples. Using a mandolin slicer or a sharp knife, slice the apples thinly and evenly between ⅛ inch and ¼ inch thick, so they can dry properly.
  2. Make a pretreatment solution (acidulated water) by combining the lemon juice or white vinegar with one quart (approximately one liter of water) and soak the apple slices in it for 10 minutes. Drain off the pretreatment solution, place the apples on a baking tray, and pat dry using a kitchen towel. Make sure to dry them properly before dehydrating them to enable them to dry faster.
  3. Place the apple slices on top of the dehydrator tray or rack in a single layer without overlapping and sprinkle some cinnamon on top. You can also sprinkle the cinnamon once they have dehydrated if you prefer a less intense flavor. Make sure there is some space between the slices to enable air to circulate properly. Carefully place the rack inside your Ninja Foodi.
  4. Set your Ninja Foodi to the dehydrator function at 135°F (57.2°C), close the lid, and set the time to 8 hours (see notes for how to air fry if your air fryer does not have the dehydrator function).
  5. Dehydrate the apples, quickly checking on them at every 3-hour interval until they develop a crispy texture and feel dry to the touch. Dehydrate them for a shorter amount of time, if you prefer your apple chips leathery.
  6. Once the apples have dried, switch off the dehydrator and remove the rack. Allow the apple slices to cool to room temperature.
  7. Once cooled, transfer the dehydrated apple chips to a bowl. Sprinkle with some cinnamon on top (optional) then transfer them to airtight jars or containers, properly labeled with a best-by date. Store in a cool, dry, and dark place.

  • How to make air fryer dehydrated apple chips (no dehydrator function)
  • Follow these steps if your air fryer does not have a built-in dehydrating function:-
  • If using waxed apples, rub a little vinegar on the surface to help remove the wax.
  • Slice the apples to the correct size. They should be between ⅛ inch (about 3mm) thick and not more than ¼ inch (approximately 6.4 mm) thick if you want them to dry properly.
  • Make sure to properly dry the apple slices before dehydrating, so they can dry quicker.
  • Place the apple slices in a single layer in your dehydrating rack, and do not overcrowd them. Cook in batches if necessary.
  • The time it takes to dehydrate apple chips will depend on how thin or thick you slice them, how well you dry the apples before dehydrating, as well as the humidity levels in the air around you. So feel free to adjust the time accordingly.
  • You will know the apples are done when they develop a crispy and dry texture.

  • lay the apple slices on your air fryer basket and air fry at 350°F (180°C) for 8-10 minutes, flipping midway through cooking. Feel free to air fry them 2-3 minutes longer, if they are not done to your liking.
  • once done, remove the basket from the air fryer, and allow the chips to cool completely. They will crispen up some more as they cool.
