No-Bake Granola Bars

These no-bake granola bars combine oats, peanut butter, mixed nuts, and a variety of seeds with honey and vanilla for sweetness and flavor. Pressed and chilled until firm, they offer a chewy texture with nutty and sweet notes complemented by chocolate chips. Made without baking, they are convenient to prepare and customizable with different nut butters or mix-ins.

Description

No-Bake Granola Bars blend rolled oats, peanut butter, mixed nuts or trail mix, honey, coconut oil, flaxseeds, chia seeds, hemp seeds, vanilla, salt, and dairy-free chocolate chips. The mixture is combined, pressed into a lined pan, and chilled for at least two hours until firm. This process yields bars that hold together without baking, making them a practical snack option. You can shape or size them to preference once set.

The bars present a chewy but solid texture from the combination of seeds, nuts, and oats, and a balance of sweetness from honey and chocolate chips. Coconut oil helps bind the ingredients and adds subtle richness.

The recipe encourages variations with any nut butter or nut combinations and suggests using maple syrup and vegan chocolate chips for a vegan option. These bars can be cut to size or shaped as energy bites to suit snack needs.

Chilling time is essential for firm results. The bars can be stored chilled for up to two weeks or frozen for longer storage.
