Description
This cheesecake starts with a crumbly base made by mixing digestive biscuit or graham cracker crumbs with melted butter, chilled to set. The filling is a smooth mixture of mascarpone and cream cheese sweetened with icing sugar and flavored with vanilla and instant coffee dissolved in hot water. Whipped cream is folded in to thicken the filling to stiff peaks without gelatin, ensuring proper texture.
Half of the filling is spread over the chilled base, then dipped ladyfingers are arranged in a layer on top. The ladyfingers are dipped quickly on each side in coffee to prevent sogginess. Once assembled, the dessert is typically chilled to let flavors meld and textures set, resulting in a creamy, coffee-flavored cake with a soft biscuit layer and a lightly bitter cocoa finish.
This cheesecake is suitable for making up to two days ahead, allowing time for flavors to develop before serving, especially around occasions like Valentine's Day.

- 1 cup water hot, 8 oz / 225 ml
- 2 teaspoons vanilla extract
- 1 ladyfingers around 30 biscuits, pack
- cocoa powder for decorating
