Description

The recipe begins by grinding roasted hazelnuts into a paste using a high-speed blender or food processor. This process releases natural oils, creating a creamy base. Separately, chocolate chips are gently melted over a double boiler or in the microwave, taking care to avoid overheating that would cause the chocolate to seize. The melted chocolate is then combined with the hazelnut paste along with vegetable oil, confectioners' sugar, unsweetened cocoa powder, vanilla extract, and salt to balance sweetness and enhance flavor.

The mixture is blended again until smooth and uniform, yielding a spreadable texture similar to commercial Nutella. This homemade spread captures the distinct roasted hazelnut and cocoa profile, with the flexibility to be used immediately or cooled to thicken.

This recipe makes about 16 ounces and servings are roughly two tablespoons. It can be stored in a resealable jar and enjoyed as a topping or ingredient in various desserts and snacks.

  • 1 cup hazelnut or about 5 oz
  • 12 ounces chocolate chips
  • 2 tablespoons vegetable oil
  • 1 tablespoon confectioners’ sugar
  • 1 tablespoon cacao powder
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon kosher salt

Instructions

  1. Prep a double boiler to melt chocolate, by adding a pot of water to the stove and heat over high to boil and add a stainless steel bowl over the pot and add the chocolate.
  2. Meanwhile, in a Vitamix, food processor, or blender, grind the hazelnuts into a paste. You may have to scrape down the edges to fully blend.
  3. Add oil, sugar, cacao, salt, and vanilla and continue to blend. Again, you may need to scrape down the edges to ensure it all blends well.
  4. While the water boils, let the chocolate melt and stir constantly - ensuring that it doesn't burn or overhead which will result in it seizing. Stir until it is smooth.
  5. Add the melted chocolate to the hazelnut mixture and blend again until smooth.
  6. Pour the homemade Nutella into a jar or other resealable container and let it cool and thicken. Or use immediately if desired.

Notes

  • This recipe yields about 16 ounces; serving size is 2 tablespoons.
  • To melt chocolate without a double boiler, microwave at 70% power in short intervals stirring frequently to avoid seizing.
  • Scrape down the sides of the blender while grinding hazelnuts and during blending to ensure smoothness.
