Oatmeal Breakfast Cookies

Oatmeal Breakfast Cookies combine oat flour and rolled oats with warming cinnamon, applesauce, and natural sweeteners for soft cookies studded with raisins and walnuts. Flaxseed replaces the egg, making them plant-based friendly. These baked cookies offer a chewy texture and gentle sweetness suitable for a morning snack or on-the-go bite.

Description

These cookies start with a combination of oat flour and old-fashioned rolled oats mixed with cinnamon, baking powder, and sea salt to build a mildly spiced base. Applesauce, coconut sugar, maple syrup, melted coconut oil, flaxseed egg substitute, and vanilla extract form the wet ingredients that bind the dough and add moisture and sweetness. Stirred raisins and chopped walnuts provide bursts of chew and crunch.

After mixing wet and dry ingredients, the dough is shaped into cookies and baked until the edges turn lightly golden, while the centers remain tender. The result is a wholesome breakfast cookie with a rustic oat texture and balanced natural sweetness without refined sugar.

The oatmeal cookies cool before serving or storing. Their composition makes them practical for batch baking and storing for quick nutritious snacks throughout the week.
