Oatmeal Stuffed Breakfast Baked Apples

These oatmeal stuffed breakfast baked apples are a delicious and comforting way to start the day. Filled with old fashioned oats, dried fruit, toasted nuts, and just a touch of sweetness.

Ingredients

  • 4 large granny smith apples
  • 1 cup old fashioned oats
  • 1/4 cup all-purpose flour
  • 1/4 cup dark brown sugar
  • 1/4 cup chopped dried cranberries
  • 1/4 cup chopped toasted pecans
  • 4 tablespoons butter frozen, diced
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350 degrees F and spray an 8x8 baking dish with non-stick cooking spray.
  2. Cut the top off each apple and scoop out the core. I find it easiest to use a melon baller or a smaller spoon.
  3. In a small bowl combine oats, flour, brown sugar, dried cranberries, pecans, butter, and cinnamon.
  4. Add apples to the prepared pan.
  5. Divide the oat mixture between the 4 apples and stuff the centers of the apples.
  6. Bake, uncovered, for 25-30 minutes, or until the apples have softened slightly and the oat mixture is starting to brown.
  7. Serve warm with a drizzle of maple syrup, a dollop of whipped cream, or a side of yogurt.
