One Pan Baked Oatmeal
Description
This One Pan Baked Oatmeal recipe begins by mashing ripe bananas in a baking dish, which adds natural sweetness and moisture to the oats. Rolled oats and chia seeds are stirred in with cinnamon, then combined with almond milk to create a batter that bakes evenly. A topping of frozen mixed berries and shredded unsweetened coconut sprinkled over the top adds bursts of flavor, color, and texture as they soften and release juices during baking.
Baked at 350°F for about 25 to 30 minutes, the oatmeal develops a golden crust while remaining soft inside with a creamy texture from the soaked oats and chia seeds. After cooling slightly, it can be cut into six portions for serving. Maple syrup or nut butter drizzled on top complement the natural sweetness and offer a pleasing richness.
This dish is suitable for a nutritious and hearty breakfast, especially when fruit and whole grains are desired. It can be served warm and portioned easily for multiple people.
