  • 2 medium banana ripe
  • 2 cups rolled oats old fashioned
  • 1 Tablespoon chia seeds
  • cinnamon for sprinkling
  • 1 cup almond milk or any milk of choice
  • 2 cups berries I used a mixed berry blend with strawberries, blueberries and raspberries and evenly distributed them, frozen
  • 2 Tablespoons coconut unsweetened, shredded
  • maple syrup drizzle of nut butter, etc, for topping, drizzle

Instructions

  1. Preheat oven to 350ºF and spray an 8x8 baking dish with cooking spray.
  2. Mash bananas in the baking dish.
  3. Add oats, chia seeds and cinnamon.
  4. Add milk and stir to combine.
  5. Top with frozen berries and shredded coconut.
  6. Bake for 25-30 minutes until the top is nicely golden.
  7. Remove from the oven and let cool for a few minutes. Portion into 6 pieces and serve with a drizzle of maple syrup and nut butter.
