  • 3 tablespoons olive oil
  • 1 yellow onion diced
  • 4 cloves garlic minced
  • 2 tablespoons tomato paste
  • 14.5 ounces diced tomatoes canned
  • 1 teaspoon kosher salt
  • 1/2 teaspoon thyme dried
  • 1/2 teaspoon Italian seasoning dried herbs
  • 1/2 teaspoon black pepper or to taste
  • 1/2 cabbage chopped into 1-2 inches chunks, head
  • 3 carrot peeled and chopped
  • 1 zucchini chopped, small
  • 2 celery chopped, stalks
  • 8 ounces green beans trimmed and halved
  • 8 cups vegetable broth or low sodium chicken broth

Instructions

  1. Add the olive oil to a large pot or Dutch oven over medium heat. Once it starts simmering, add the onion and garlic, and cook until the onions are translucent, about 3-4 minutes.
  2. Add tomato paste, stir, and cook for 1 minute.
  3. Add the rest of the ingredients and the broth.
  4. Bring to a boil, reduce heat to low-medium, and simmer for 30 minutes or until the veggies are tender.
  5. Serve hot.
