Instructions

  1. Caramelize the Onions:In a large pot, melt butter over medium heat. Add sliced onions and cook, stirring occasionally, for 10-12 minutes until the onions are golden brown and caramelized.
  2. Add Garlic and Wine:Add minced garlic and cook for 1-2 minutes until fragrant. If using wine, pour it in now and cook for 2-3 minutes, allowing the alcohol to evaporate.
  3. Cook the Pasta:Add the beef broth and bring to a simmer. Stir in the pasta, cover the pot, and cook according to the pasta package instructions, about 10-12 minutes, until the pasta is tender and the liquid is mostly absorbed.
  4. Finish the Sauce:Stir in heavy cream, Gruyère cheese, and Parmesan cheese. Season with salt and pepper to taste. Stir until the cheese is melted and the sauce is creamy.
  5. Serve:Garnish with fresh thyme and extra cheese if desired. Serve hot and enjoy!

Notes

  • Make Ahead:This dish can be made ahead and stored in the fridge for up to 2 days. Reheat on the stove with a splash of broth or cream to loosen the sauce.
  • Customizing the Flavor:For extra richness, substitute half and half for the heavy cream. Add cooked chicken or ground beef to make the dish heartier.
  • Serving Suggestions:Serve the pasta with a side of garlic bread and a fresh green salad. Pair with a glass of dry white wine.
  • Storage Tips:Store leftovers in an airtight container in the fridge for up to 3 days. Reheat over medium heat, adding a little extra liquid if needed.
