- 12 oz pasta (such as penne or fusilli)
 - 2 tablespoon butter
 - 2 large onions, thinly sliced
 - 4 cloves garlic, minced
 - ½ cup dry white wine (optional)
 - 4 cups beef broth
 - 1 cup heavy cream
 - 1 cup grated Gruyère cheese
 - ½ cup Parmesan cheese, grated
 - salt and pepper to taste
 - Fresh thyme sprigs for garnish (optional)
 
Instructions
- Caramelize the Onions:In a large pot, melt butter over medium heat. Add sliced onions and cook, stirring occasionally, for 10-12 minutes until the onions are golden brown and caramelized.
 - Add Garlic and Wine:Add minced garlic and cook for 1-2 minutes until fragrant. If using wine, pour it in now and cook for 2-3 minutes, allowing the alcohol to evaporate.
 - Cook the Pasta:Add the beef broth and bring to a simmer. Stir in the pasta, cover the pot, and cook according to the pasta package instructions, about 10-12 minutes, until the pasta is tender and the liquid is mostly absorbed.
 - Finish the Sauce:Stir in heavy cream, Gruyère cheese, and Parmesan cheese. Season with salt and pepper to taste. Stir until the cheese is melted and the sauce is creamy.
 - Serve:Garnish with fresh thyme and extra cheese if desired. Serve hot and enjoy!
