Onion Chutney

This Onion Chutney is made by slowly caramelizing sweet onions with brown sugar and a touch of olive oil, then flavored with ground cloves, cinnamon, and finished with balsamic vinegar. Description

Onion Chutney combines sweet Vidalia or similar large onions caramelized in olive oil, enhanced by brown sugar and warming spices like ground cloves and cinnamon. As the onions cook over medium heat for about an hour, their natural sugars concentrate, creating a caramelized texture and deep flavor. The addition of balsamic vinegar adds subtle acidity that balances the sweetness and spices, resulting in a thick, richly colored chutney.

The chutney is versatile as an accompaniment to cheese boards, grilled meats, or sandwiches where its sweet and spiced qualities can complement savory flavors. Because of its thick consistency, it can be spread easily and holds well when stored in jars.

Ingredients

  • 4 onion I prefer Vidalia or other type of sweet onion, large
  • 5 tbsp brown sugar
  • 1 tbsp olive oil
  • 1 oz balsamic vinegar
  • ½ tsp cloves ground
  • ½ tsp ground cinnamon

Instructions

  1. Peel and chop the onions into large chunks.
  2. Pour the oil into a pan and over a medium heat sauté the onions.
  3. After about 40 minutes when the onions have started to caramelize (sugars in the onions convert to caramel), add the brown sugar.
  4. Add the ground cinnamon and cloves.
  5. Lastly, add the balsamic vinegar and stir well.
  6. Continue sautéing for another 20 minutes of so or until a deep colored, rich, thick caramelized onion mixture is formed. Allow to cool in the pan then transfer to a mason or jelly jar.
