Oven Roasted Salsa

This salsa with jalapeños recipe is a roasted, easy-to-make dip. It's an easy salsa recipe with fresh tomatoes that can be served with chips, as a part of other dishes, or on top of your favorite tacos and burrito bowls.

Ingredients

  • 4 pounds roma tomatoes (about 10)
  • 1 whole yellow onion
  • 6 cloves garlic peeled, left whole
  • 3 whole jalapeños
  • 3 whole limes juiced
  • cups fresh cilantro
  • 1 tablespoon ground cumin
  • 1 teaspoon coarse kosher salt (more to taste if needed)
  • 1 teaspoon sugar

Instructions

  1. Start by slicing the tomatoes in half length-wise. Place them on a baking sheet cut side down.
  2. Cut the onion into quarters and add it to the baking sheet with the tomatoes.
  3. If you are removing the seeds and ribs from the jalapeños, do so and then add to the baking sheet.
  4. Add the garlic to the baking sheet as well.
  5. Place the baking sheet into the oven and broil for 7-9 minutes. Once they begin to roast and blacken, remove them from the oven and allow them to cool.
  6. Once they have cooled completely, add them to a blender or food processor with lime juice, cilantro, salt, cumin, and sugar.
  7. Blend until your desired consistency.
  8. Serve immediately or place in an airtight container in the refrigerator until ready to serve.
